# How To Make It:
- Set the oven to 425°F and allow it to fully preheat.
- Pat chicken thighs dry with paper towels. Rub with 1 tablespoon olive oil, kosher salt, and ground black pepper.
- In a small mixing bowl, whisk together honey, Dijon mustard, apple cider vinegar, minced garlic, dried thyme, and smoked paprika until smooth.
- In a large roasting pan or rimmed baking sheet, combine carrots, parsnips, sweet potato, and red onion. Toss with 2 tablespoons olive oil, salt, black pepper, and fresh rosemary. Arrange vegetables in a single layer.
- Nestle chicken thighs among the vegetables, skin side up. Brush chicken thighs with half of the honey glaze.
- Roast for 25 minutes in the preheated oven.
- Remove the pan from the oven. Brush chicken with remaining glaze and gently toss vegetables.
- Return pan to oven and roast an additional 20 minutes, until chicken skin is crisp and golden, and vegetables are fork-tender. Ensure chicken reaches an internal temperature of 165°F.
- Remove rosemary sprigs. Let the dish rest for 5 minutes before serving.
