Feta Fried Eggs Grilled Cheese (Printable)

Golden grilled bread layered with crispy feta fried eggs and melted cheese for a savory meal.

# What You'll Need:

→ Dairy & Cheese

01 - 4 ounces crumbled feta cheese
02 - 4 slices cheddar or mozzarella cheese
03 - 2 tablespoons unsalted butter, at room temperature

→ Bread

04 - 4 slices sourdough or country-style bread

→ Eggs

05 - 2 large eggs

→ Pantry

06 - 1 tablespoon olive oil
07 - Freshly ground black pepper, to taste
08 - Pinch of red pepper flakes (optional)

# How To Make It:

01 - Heat a nonstick skillet over medium heat and add the olive oil.
02 - Sprinkle half of the crumbled feta cheese in two circles roughly the size of the bread slices directly onto the skillet. Crack one egg into the center of each feta circle. Season with black pepper and red pepper flakes if desired. Cook for 2 to 3 minutes until the feta edges crisp and the egg whites are set. Carefully flip and cook an additional minute for a soft yolk or longer for firmer yolk. Remove and set aside.
03 - Butter one side of each bread slice. Place two slices on a clean surface, buttered side down, then layer each with two slices of cheddar or mozzarella cheese.
04 - Place a feta-fried egg on each cheese-layered slice. Top each with the remaining bread slices, buttered side up.
05 - Wipe out the skillet and return it to medium heat. Grill the sandwiches for 2 to 3 minutes per side, pressing gently, until the bread is golden brown and the cheese has melted.
06 - Slice the sandwiches and serve immediately.

# Expert Advice:

01 -
  • The feta crisps up in the pan and creates these salty, golden pockets that anchor the whole sandwich in a way regular grilled cheese never could.
  • It comes together in 20 minutes but tastes like you've been fussing over lunch all morning.
  • One sandwich somehow feels elegant enough for a date night dinner and casual enough for a solo midnight craving.
02 -
  • The feta has to hit a hot enough pan to crisp up—if your pan isn't at the right temperature, the cheese just softens and never gives you that golden, nutty edge that makes this whole thing special.
  • Flipping the eggs is optional but worth it if you want the bottom to set properly so the yolk doesn't break when you flip the sandwich in the pan.
03 -
  • Have your butter at room temperature so it spreads easily without tearing the bread—cold butter will rip through delicate bread and create an uneven surface.
  • Don't skip the gentle press with your spatula while grilling the sandwich; it helps the cheese melt faster and creates better contact between the bread and pan for an even golden crust.
